Ingredients

2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, 1 cup white sugar, ½ cup butter, softened, 2 large eggs, 2 teaspoons vanilla extract, 2 ripe bananas, mashed, 1 cup fresh blueberries

Instructions

Set the oven to 350 degrees F (175 degrees C) and grease three mini loaf pans. In a medium bowl, whisk together the flour, baking soda, and salt. Use an electric mixer in a large bowl to cream the butter and sugar until light and fluffy, then mix in the eggs one by one. Incorporate the vanilla and mashed bananas. Gradually add the dry ingredients to the wet mixture, beating until just combined, then gently fold in the blueberries. Divide the batter among the prepared pans and bake for 30 to 35 minutes, or until a toothpick comes out clean. Let the loaves rest in the pans for 10 minutes before moving them to a wire rack to cool.
