Ingredients

1 clove garlic, minced, 1 cup papaya - peeled, seeded and cubed, ½ cup water, ½ cup white wine, ½ cup honey, ¼ cup tomato paste, 4 pounds pork spareribs

Instructions

Combine the garlic, papaya, water, wine, honey, and tomato paste in a food processor and pulse until finely chopped. Place the ribs in a baking dish, coat with the marinade, and refrigerate for at least 6 hours or overnight. Preheat the oven to 400 degrees F (200 degrees C). Remove the ribs from the marinade, then boil and simmer the marinade in a saucepan for 10 minutes. Bake the ribs for about 1 1/2 hours, basting every 15 minutes with the reduced marinade until the meat pulls away from the bone.
