Ingredients

1 pork tenderloin, salt and ground black pepper to taste, 1 tablespoon vegetable oil, 1 red onion, sliced, 2 shallots, sliced, 3 fresh thyme sprigs, or more to taste, 2 firm plums, pitted and each cut into 4 wedges, 1 cup water, 1 tablespoon balsamic vinegar, 1 teaspoon cold butter

Instructions

Preheat the oven to 400 degrees F (200 degrees C) and season the pork tenderloin with salt and pepper. Brown the meat in an oven-proof skillet for 2 to 4 minutes per side, then set it aside. In the same pan, saute onions and shallots until they are caramelized and golden. Stir in thyme, return the pork to the skillet, and arrange plum quarters around the meat. Bake for about 20 minutes until the pork reaches an internal temperature of 145 degrees F (63 degrees C). Remove the pork and plums, then deglaze the skillet with water and balsamic vinegar. Simmer until the liquid reduces by half, whisk in butter until the sauce is glossy, and pour it over the pork and plums to serve.
