Char Siu (Chinese Barbeque Pork)
Ingredients
2 tablespoons honey, 2 tablespoons Shaoxing cooking wine, 1 tablespoon hoisin sauce, 1 tablespoon pureed kiwi, 1 tablespoon Chinese dark soy sauce, 1 tablespoon Thai chile sauce, 2 cloves garlic, grated, 2 teaspoons oyster sauce, ½ teaspoon Chinese five-spice powder, 1 ½ pounds pork belly, skin removed
Instructions
Combine honey, cooking wine, hoisin sauce, kiwi, dark soy sauce, chile sauce, garlic, oyster sauce, and five-spice powder in a large resealable bag. Add the pork belly, seal while removing excess air, and refrigerate for at least 2 days, flipping occasionally. Preheat your oven to 275 degrees F (135 degrees C) and set a wire rack over a rimmed baking sheet. Place the pork on the rack, keeping the marinade aside. Bake for about 1 hour until the internal temperature hits 160 degrees F (71 degrees C). Baste with the reserved marinade, move the oven rack to the top, and switch to the broiler. Broil for 5 minutes until dark and glossy, then flip, baste, and broil the other side for another 5 minutes until the edges blacken. Slice with a sharp knife.
