Green Papaya Salad
Ingredients
3 cloves garlic, peeled, 3 Thai green chiles, 6 green beans, cut into 1 inch pieces, 1 large unripe papaya, peeled and cut into thin strips, 1 tomato, halved and seeded, 2 tablespoons fish sauce, 2 tablespoons lime juice, 1 teaspoon palm sugar, 2 tablespoons finely chopped unsalted, dry-roasted peanuts
Instructions
Roughly pound garlic, chiles, and green beans in a mortar. Add the papaya and pound to bruise, then stir in fish sauce, lime juice, and sugar before pounding again. Incorporate the tomato by pounding gently, then stir in peanuts and serve. Alternatively, use a food processor to coarsely chop the garlic, chiles, and beans. Mix in papaya and pulse, then add tomato, fish sauce, lime juice, and sugar and pulse until combined but still textured. Finish by stirring in peanuts and transferring to a dish.
