A-Number-1 Banana Cake
Ingredients
2 ½ cups all-purpose flour, 1 tablespoon baking soda, 1 pinch salt, 1 cup white sugar, ¾ cup light brown sugar, ½ cup unsalted butter, softened, 2 eggs, 4 ripe bananas, mashed, ⅔ cup buttermilk, ½ cup chopped walnuts
Instructions
Set the oven to 350 degrees F (175 degrees C) and grease and flour two 8-inch round pans. Whisk the flour, baking soda, and salt together in a small bowl. In a large bowl, cream the butter with both sugars until fluffy, then beat in the eggs and stir in the mashed bananas. Gradually add the flour mixture and buttermilk in alternating additions, then fold in the walnuts. Transfer the batter to the pans and bake for about 30 minutes until the cake is springy. Cool the layers on a damp tea towel after removing them from the oven.
