Ingredients

1 ½ cups mashed bananas, 2 teaspoons lemon juice, 3 cups all-purpose flour, 1 ½ teaspoons baking soda, ¼ teaspoon salt, 2 ⅛ cups white sugar, ¾ cup butter, 3 eggs, 2 teaspoons vanilla extract, 1 ½ cups buttermilk

Instructions

Preheat oven to 275 degrees F (135 degrees C) and grease and flour a 9x13-inch pan. Combine mashed bananas with lemon juice in one bowl and whisk flour, baking soda, and salt in another. Cream butter and sugar until light and fluffy, then beat in eggs individually followed by vanilla. Mix in the dry ingredients alternately with buttermilk, then stir in the banana mixture. Pour batter into the pan and bake for about 1 hour until a toothpick comes out clean. Move the cake directly to the freezer for 45 minutes to ensure moisture. Prepare frosting by beating butter and cream cheese until smooth, adding vanilla, and then mixing in confectioners sugar until creamy. Spread onto the cooled cake.
