Paleo Persimmon Pie
Ingredients
½ teaspoon olive oil, 3 cups pecans, 20 pitted dates, ¼ cup agave nectar, 6 ripe persimmons, 2 tablespoons chopped pecans, 1 teaspoon ground cinnamon, for garnish
Instructions
Lightly oil an 8-inch pie pan. Finely grind 3 cups of pecans and dates in a food processor for about 1 minute. Add agave nectar and process for 30 seconds until well combined. Press the nut mixture into the pan. Peel, pit, and puree the persimmons until smooth, then pour over the crust. Finish with a garnish of chopped pecans and cinnamon.
