Spiced Persimmon Butter
Ingredients
20 ripe Fuyu persimmons, peeled and coarsely chopped, 1 medium lemon, juiced, ¼ cup agave syrup, 1 teaspoon ground cinnamon, ¼ teaspoon ground cloves
Instructions
Place persimmons in a slow cooker, drizzle with lemon juice, and cook on High for 2 hours. Mash the fruit, stir in agave, cinnamon, and cloves, then cook on Low, uncovered, for 8 hours to overnight until thickened. Puree the mixture with a blender until smooth, then pack into hot, sterilized jars, leaving 1/4 inch of headspace. Remove air bubbles, wipe the rims, seal with lids and rings, and allow to cool before refrigerating.
