Fresh Fig Freezer Jam
Ingredients
5 cups white sugar, 3 cups stemmed and coarsely chopped figs, ⅓ cup lemon juice, 2 (3 ounce) pouches liquid pectin (such as CERTO®)
Instructions
In a large glass or plastic bowl, combine the figs and sugar and allow them to sit for about 15 minutes, stirring occasionally as the sugar begins to dissolve. In a separate bowl, whisk the lemon juice and pectin together. Blend the lemon juice mixture into the figs until all sugar crystals have dissolved. Pour the final mixture into sterilized plastic containers, leaving 1/4 inch of space at the top, then cover and store in the refrigerator or freezer.
