Pear Jam
Ingredients
4 ½ cups mashed ripe pears, ¼ cup lemon juice, 3 tablespoons powdered fruit pectin, 1 teaspoon ground cinnamon, ½ teaspoon ground cloves, ½ teaspoon ground allspice, ½ teaspoon ground nutmeg, 7 ½ cups white sugar, 1 teaspoon butter, 8 half-pint canning jars with lids and rings, or as needed
Instructions
Combine pears, lemon juice, pectin, and spices in a large pot and bring to a boil while stirring constantly. Add sugar and return to a rolling boil for 1 minute before stirring in butter to settle the foam. Fill sterilized jars with the jam, leaving 1/4-inch headspace, and remove air bubbles before sealing with lids and rings. Process the jars in a boiling water bath for 10 minutes. Allow to cool completely on a cloth or wood surface, then check for a tight seal before storing in a cool, dark place.
