Black Mission Fig Preserves
Ingredients
2 cups fresh Black Mission figs, stemmed and halved, 1 cup white sugar, 1 cup water, 1 tablespoon lime juice, ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ⅛ teaspoon ground white pepper, 1 13-ounce jar with lid
Instructions
Using a spoon, scoop the flesh from the figs and discard the skins. In a large saucepan over medium-high heat, bring sugar and water to a boil, stirring until the sugar is fully dissolved. Incorporate the fig pulp, lime juice, cinnamon, ginger, and white pepper into the mixture. Cook while stirring frequently until a candy thermometer reaches 210 degrees F (100 degrees C), which takes roughly 20 minutes. While the preserves simmer, sterilize a jar and its lid in boiling water for at least 5 minutes. Transfer the hot preserves into the sterilized jar, leaving 1/4 inch of space at the top. Secure the lid and allow the jar to cool before refrigerating.
