Pear Relish
Ingredients
12 large pears, 3 large onions, coarsely chopped, 3 large green bell peppers, seeded and coarsely chopped, 4 jalapeno peppers, coarsely chopped, 2 cups apple cider vinegar, 2 cups white sugar, 9 ounces prepared mustard, 1 tablespoon salt, 10 (1 pint) canning jars with lids and rings, or as needed
Instructions
Boil pears until tender, then drain, cool, peel, core, and coarsely chop. Finely process the pears with onions, green bell peppers, and jalapenos, then transfer the mixture to a large pot. Stir in vinegar, sugar, mustard, and salt, simmering for about 1 hour until thickened. Pack the hot relish into sterilized jars, leaving 1/4-inch headspace and removing air bubbles. Seal with lids and process in a boiling water bath for 20 minutes. Allow jars to cool and check for a tight seal before storing in a cool, dark place.
