Fig and Onion Spread
Ingredients
¼ cup olive oil, 1 large red onion, chopped, 2 cups chopped fresh Black Mission figs, ¼ cup aged balsamic vinegar, 2 tablespoons white sugar, or to taste
Instructions
Heat olive oil in a saucepan over medium heat and sauté onion. Lower heat to medium-low, cover, and cook for 20 to 25 minutes until caramelized. Add figs and cook for 10 to 15 minutes until they soften. Pour in balsamic vinegar and simmer until the liquid evaporates, about 5 to 10 minutes. Gradually stir in sugar until it reaches your preferred sweetness. Serve warm or cold.
