Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x5-inch loaf pan with cooking spray. In a large bowl, whisk together the butter, brown sugar, one egg, sour cream, 1/4 cup white sugar, and vanilla until the mixture is smooth, then stir in the mashed bananas. Gently mix in one cup of flour, baking soda, baking powder, and salt. In a separate bowl, blend the cream cheese, the other egg, 1/4 cup white sugar, and 3 tablespoons of flour. To assemble, pour half of the banana batter into the loaf pan, layer the cream cheese mixture on top, and cover with the remaining banana batter. Bake for about 50 minutes until the top is firm, then allow it to cool in the pan for 5 minutes.
