Strawberry Fig Preserve
Ingredients
3 cups mashed fresh ripe figs, 3 cups white sugar, 2 (3 ounce) packages strawberry flavored gelatin (such as Jell-O®), 6 half pint canning jars with lids and rings
Instructions
Combine figs, sugar, and strawberry gelatin in a saucepan over medium-high heat and bring to a rolling boil for 4 minutes, stirring frequently. Ladle the hot mixture into sterilized jars, leaving 1/2 inch of headspace, and remove air bubbles before sealing with lids and rings. Process the jars in a boiling water bath for 15 minutes, ensuring they are covered by 1 inch of water. Allow the jars to cool completely on a cloth-covered surface, then verify the seals are tight before storing in a cool, dark area.
