Ingredients

3 cups fresh figs, stemmed and quartered, 3 cups white sugar, 1 lemon, thinly sliced and seeds removed, 2 (3 ounce) packages strawberry-flavored Jell-O® mix, 3 1-pint canning jars with lids and rings, or as needed

Instructions

Mix figs, sugar, lemon slices, and strawberry gelatin in a large pot and let stand for 1 hour. Boil and cook over medium heat for 25 to 40 minutes until the mixture thickens and foam disappears. Fill sterilized jars with the preserves, leaving 1/4 inch of headspace, and remove any air bubbles before sealing with lids and rings. Process the jars in a boiling water bath for 10 minutes, then cool and verify the seals before storing for at least 2 days.
