Ingredients

2 tablespoons olive oil, divided, 2 shallots, chopped, 1 clove garlic, minced, 1 teaspoon chopped fresh thyme, ¼ teaspoon salt, ¼ teaspoon ground black pepper, ¾ cup soft goat cheese, ½ cup shredded mozzarella cheese, ½ (8 ounce) package cream cheese, 6 figs, chopped, 1 tablespoon chopped fresh basil, 6 skinless, boneless chicken breast halves, 12 large, thin slices prosciutto

Instructions

Preheat your oven to 350 degrees F (175 degrees C) and grease a baking sheet with olive oil. In a skillet, sauté shallots in olive oil until translucent, then stir in garlic, thyme, salt, and pepper until fragrant. Combine this mixture in a bowl with goat cheese, mozzarella, cream cheese, chopped figs, and basil. Pound chicken breasts until thin, fill each with the cheese mixture, and roll them up before wrapping with prosciutto. Bake the chicken rolls seam-side down for 20 minutes, then flip and bake for 20 more minutes until they reach an internal temperature of 165 degrees F (74 degrees C). Allow the chicken to rest for 5 minutes before serving.
