Ingredients

½ cup white sugar, 2 tablespoons margarine, 2 eggs, beaten, 1 cup all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon salt, 1 teaspoon vanilla extract, 10 Italian plums, halved and pitted

Instructions

Preheat oven to 350 degrees F (175 degrees C) and grease and flour a 7x11-inch baking dish. Using an electric mixer, beat 1/2 cup sugar with 2 tablespoons margarine until creamy. Incorporate eggs, 1 cup flour, baking powder, salt, and vanilla into the mixture, then spread the batter into the dish. Place plums skin-side down over the batter. Create a crumble by mixing 1 cup sugar, 1/2 cup flour, 3 tablespoons margarine, and cinnamon; sprinkle this over the plums. Bake for about 35 minutes until the plums have softened.
