Ingredients

1 shortcrust pastry crust, 6 ½ ounces 70% dark chocolate, chopped, 1 ½ cups ground almonds, 2 eggs, ½ cup superfine sugar, 6 ½ tablespoons butter, softened, 3 pears - peeled, cored, and quartered

Instructions

Preheat your oven to 375 degrees F (190 degrees C). Roll out pastry to a 1/4-inch thickness, line a 9-inch tart dish, prick with a fork, and freeze for 20 minutes before blind baking for 10 minutes. Lower the oven temperature to 325 degrees F (165 degrees C). Gently melt chocolate over a double boiler with minimal stirring. Combine ground almonds, eggs, sugar, and butter in a bowl, then stir in the melted chocolate. Pour the filling into the crust, press pear slices onto the surface, and bake for 35 to 45 minutes until the pastry is golden and the center is set.
