Ingredients

4 cups water, 1 cup white sugar, 2 tablespoons honey, 1 vanilla bean, split lengthwise, 1 cinnamon stick, 5 pods cardamom, crushed, 4 Conference pears - peeled, halved, and cored

Instructions

Simmer water, sugar, honey, and spices, then poach pears for 10 minutes and cool. Prepare a dough from flour, sugar, salt, butter, and egg yolk; press into a tart pan, freeze for 30 minutes, and blind bake at 375 degrees F for 20 minutes. Create frangipane by beating butter, sugar, almonds, eggs, and extracts until smooth. Spread the mixture over the crust, arrange fanned pear slices on top, and bake at 350 degrees F for 40 to 45 minutes until firm.
