Ingredients

cooking spray, 4 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, 1 teaspoon cinnamon, 1 cup white sugar, 1 cup brown sugar, 3 eggs, beaten, 2 cups milk, 2 ½ cups persimmon pulp, 6 tablespoons butter, melted

Instructions

Preheat your oven to 300 degrees F (150 degrees C) and prepare a 9x13-inch baking dish with cooking spray. Whisk the flour, baking soda, baking powder, salt, cinnamon, and both sugars together in a bowl until combined. In a large bowl, beat eggs and milk until smooth, then add the dry ingredients and persimmon pulp in alternating stages, mixing well after each addition. Stir in melted butter and pour the batter into the pan. Bake for about 1 hour or until a toothpick comes out clean, then let cool before serving.
