Ingredients

30 chicken wing sections, 1 (12 ounce) can mango nectar, ¼ cup brown sugar, 6 habanero peppers, stemmed, 2 tablespoons soy sauce, 1 tablespoon sriracha hot chili sauce, 1 tablespoon rice vinegar, 1 stick butter, 3 cloves garlic, minced, 2 tablespoons honey, 1 cup cornstarch, 2 cups vegetable oil for frying

Instructions

Dry the chicken wings and chill them on a baking sheet. In a food processor, blend mango nectar, brown sugar, habaneros, soy sauce, sriracha, and vinegar until the peppers are pureed. Sauté garlic in melted butter, then stir in the mango mixture and honey, simmering until reduced to a thick glaze. Lightly coat the wings in cornstarch and deep-fry at 350 degrees F until crispy, keeping finished batches warm in a 200 degree F oven. Finally, toss the fried wings in the glaze until thoroughly coated.
