Ingredients

1 tablespoon olive oil, 4 (4 ounce) fillets orange roughy, 1 orange, juiced, 1 lemon, juiced, ½ teaspoon lemon pepper

Instructions

Warm oil in a large skillet over medium-high heat. Add the fillets to the hot oil. Pour orange and lemon juices over the fish, then season with lemon pepper. Cook for 2 to 3 minutes per side until the fish flakes easily with a fork and the internal temperature reaches at least 145 degrees F (63 degrees C).
