Ingredients

1 pork tenderloin, salt and ground black pepper to taste, 1 tablespoon olive oil, 1 ½ plums, pitted and chopped, 2 tablespoons balsamic vinegar, 1 tablespoon brown sugar, 1 tablespoon honey, 2 tablespoons blueberry juice (Optional)

Instructions

Preheat your oven to 400 degrees F (200 degrees C) and prepare a baking sheet with foil. Season the pork tenderloin with salt and pepper, then sear it in a hot skillet with olive oil until golden brown on all sides, about 3 minutes per side. Move the pork to the baking sheet and roast for 15 minutes until it reaches an internal temperature of 145 degrees F (63 degrees C). Let the meat rest for 10 minutes before slicing. To make the sauce, simmer plums, balsamic vinegar, brown sugar, honey, and blueberry juice in a saucepan for 10 minutes. Blend until smooth, then return to the heat and simmer for 5 more minutes until thickened. Serve the plum sauce over the sliced pork medallions.
