Lemon Meringue Cheesecake
Ingredients
2 cups shortbread cookie crumbs, ΒΌ cup melted butter
Instructions
Preheat oven to 325 degrees F (165 degrees C). Mix cookie crumbs and melted butter, then press into a 9-inch springform pan. Cream together cream cheese, sour cream, and sugar; add eggs one at a time, then mix in lemon juice, zest, and vanilla. Pour over crust and bake for 1 hour. Cool, then refrigerate for 3 to 4 hours. Heat oven to 375 degrees F (190 degrees C). Beat egg whites with sugar and cream of tartar until stiff peaks form. Spread lemon curd over the cheesecake, top with meringue, and bake for 10 minutes until golden. Chill uncovered for at least 1 hour before serving.
