Easy Mango Cake
Ingredients
1 ripe mango, 1 (18.25 ounce) box yellow cake mix, 3 eggs, ½ cup water, ¼ cup vegetable oil, 2 tablespoons lime zest
Instructions
Preheat oven to 350 degrees F (175 degrees C) and grease a fluted tube pan. Peel and smash mangoes, reserving one cup of fruit for the cake and the rest of the pulp and juice for the glaze. Beat together the cake mix, one cup of smashed mango, eggs, water, oil, and lime zest for two minutes, then bake in the prepared pan for 40 to 50 minutes. Once the cake is cool, whisk together butter, lime juice, mango juice, and rum, then stir in confectioners' sugar and the remaining mango to create a glaze to pour over the cake.
