Cherry Pound Cake
Ingredients
2 cups all-purpose flour, 3 teaspoons baking powder, ½ teaspoon salt, 1 cup butter, 1 (8 ounce) package cream cheese, 1 ½ cups white sugar, 4 eggs, 1 teaspoon vanilla extract, 1 teaspoon almond extract, 1 cup maraschino cherries, drained and halved, ¼ cup all-purpose flour
Instructions
Preheat your oven to 325 degrees F (165 degrees C) and prepare an 8-inch tube pan by greasing and flouring it. Whisk the flour, baking powder, and salt together in a small bowl. In a large bowl, cream the butter, cream cheese, and sugar until light and fluffy. Incorporate the eggs one at a time, then add the vanilla and almond extracts. Mix in the dry ingredients until just combined. Toss the cherries in 1/4 cup of flour and fold them into the batter. Pour the mixture into the prepared pan and bake for 80 minutes or until a toothpick comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
