Ingredients

1 ½ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, 3 bananas, mashed, ¾ cup white sugar, ⅓ cup butter, melted, 1 egg, lightly beaten

Instructions

Preheat your oven to 375 degrees F (190 degrees C) and grease or line 10 muffin cups. In a large bowl, whisk together the flour, baking soda, baking powder, and salt. In another bowl, beat the bananas, sugar, melted butter, and egg before stirring them into the dry ingredients until just combined. Distribute the batter into the cups, filling them 3/4 full. For the topping, mix brown sugar, flour, and cinnamon in a small bowl, then cut in 1 tablespoon of butter with a fork until crumbly. Sprinkle this over the batter and bake for 18 to 20 minutes until a toothpick inserted into the center comes out clean.
