Ingredients

2 cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, 1 cup white sugar, ½ cup butter, 2 large eggs, 1 ¼ teaspoons vanilla, 1 ½ cups chopped apples

Instructions

Preheat oven to 375 degrees F (190 degrees C) and grease a 12-cup muffin pan. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat sugar, butter, and eggs until smooth, then stir in vanilla and apples before gradually blending in the flour mixture. Spoon the batter into the prepared muffin pan. To make the topping, combine brown sugar, flour, and cinnamon in a small bowl, cut in butter until crumbly, and sprinkle over each muffin. Bake for 20 minutes or until a toothpick comes out clean, then let cool for 5 minutes before transferring to a wire rack.
