BC Cherry Jam
Ingredients
3 cups pitted, chopped fresh cherries, ½ cup unsweetened apple juice, 2 teaspoons lemon juice, 2 (2 ounce) packages powdered fruit pectin, 3 cups white sugar, 4 half pint canning jars with lids and rings
Instructions
In a saucepan over medium heat, combine cherries, apple juice, lemon juice, and pectin, bring to a boil, then stir in sugar and boil for 2 minutes. Fill sterilized jars with the hot jam, leaving 1/4 inch headspace, and remove air bubbles before sealing with lids and rings. Process the jars in a boiling water bath for 15 minutes, then let them cool and verify that the lids have sealed properly before storing in a cool, dark place.
