Ingredients

1 recipe pastry for a 9 inch double crust pie, ¾ cup white sugar, 3 tablespoons cornstarch, 1 (20 ounce) can crushed pineapple with juice, 1 tablespoon lemon juice, 2 tablespoons milk, 1 tablespoon white sugar

Instructions

Set your oven to 425 degrees F (220 degrees C). In a medium saucepan, whisk together sugar, cornstarch, pineapple with juice, and lemon juice over medium heat. Stir constantly until the mixture thickens, then let it boil for one minute. After cooling slightly, pour the filling into a pastry-lined pie pan. Top with the second crust, seal the edges, and cut steam vents. Brush the top with milk and sprinkle with sugar. Bake for 35 minutes and serve either chilled or at room temperature.
