Chocolate Banana Muffins
Ingredients
1 ½ cups all-purpose flour, ¼ cup unsweetened cocoa powder, 1 ½ teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon salt, ½ cup white sugar, ½ cup canola oil, ¼ cup milk, 1 egg, 1 teaspoon vanilla extract, 2 large very ripe bananas, mashed, ¾ mini semisweet chocolate chips
Instructions
Preheat oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with liners. Sift together flour, cocoa, baking powder, baking soda, and salt in one bowl. In another bowl, blend sugar, oil, milk, egg, and vanilla until smooth before stirring into the dry mixture. Fold in the bananas and chocolate chips. Fill each muffin cup 3/4 of the way with batter and bake for 20 to 25 minutes, testing with a toothpick for doneness.
