Ingredients

½ cup pomegranate juice, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, ¼ cup canola oil, ⅛ teaspoon salt, ⅛ teaspoon ground black pepper, 2 medium Granny Smith apples, cored and chopped, 1 (5 ounce) package baby spinach, ⅔ cup pomegranate seeds, ⅓ cup candied pecans, ¼ cup crumbled feta cheese

Instructions

Pulse pomegranate juice, balsamic vinegar, Dijon, and honey in a food processor until mixed. Slowly stream in canola oil while the processor is running until the dressing is smooth, then stir in salt and pepper. Combine spinach, apples, pomegranate seeds, pecans, and feta in a bowl. Drizzle with the prepared dressing and toss until well mixed.
