Southern Pineapple Casserole
Ingredients
1 (20 ounce) can pineapple chunks, 6 tablespoons all-purpose flour, ½ cup white sugar, or to taste, 2 cups shredded sharp Cheddar cheese, 1 (20 ounce) can crushed pineapple, drained, 40 buttery round crackers (such as Ritz®), crushed, ½ cup butter, melted, or to taste
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Drain the pineapple chunks while reserving 1/4 cup of the juice, then combine the chunks and juice in a large bowl. Stir in the flour, sugar, Cheddar cheese, and crushed pineapple until well mixed. Transfer the mixture into a 1 1/2-quart casserole dish. In a small bowl, toss cracker crumbs with melted butter and sprinkle them over the pineapple. Bake for approximately 30 minutes until the top is golden brown.
