Sarah's Banana Bread Muffins
Ingredients
1 cup white sugar, ½ cup vegetable oil, 1 large egg, 3 ripe bananas, mashed, ¼ cup chopped walnuts, 2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt
Instructions
Set the oven to 350 degrees F (175 degrees C) and grease or line a 12-cup muffin tin. Beat sugar, oil, and egg in a large bowl until creamy, then stir in bananas and walnuts. Mix in the flour, baking soda, and salt until smooth. Fill the muffin cups 3/4 full with batter and bake for 30 to 40 minutes until the tops spring back when touched.
