Mom's Apple Fritters
Ingredients
1 quart vegetable oil for deep-frying, 1 ½ cups all-purpose flour, 1 tablespoon white sugar, 2 teaspoons baking powder, ½ teaspoon salt, ⅔ cup milk, 2 large eggs, beaten, 1 tablespoon vegetable oil, 3 cups apples - peeled, cored and chopped, 1 cup cinnamon sugar
Instructions
Preheat oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C). Combine flour, sugar, baking powder, and salt in a large bowl. Add milk, eggs, and oil, stirring until the mixture is smooth. Fold in the apples until they are evenly spread throughout the batter. Carefully drop spoonfuls of batter into the hot oil in small batches. Fry for approximately 5 minutes until golden brown. Remove the fritters with a slotted spoon and drain on paper towels. While still warm, coat the fritters thoroughly with cinnamon sugar.
