Oliebollen (Dutch Doughnuts)
Ingredients
1 (0.6 ounce) cake compressed fresh yeast, 1 cup lukewarm milk, 2 ¼ cups all-purpose flour, 2 teaspoons salt, 1 large egg, ¾ cup dried currants, ¾ cup raisins, 1 medium Granny Smith apple - peeled, cored and finely chopped, 1 quart vegetable oil for deep-frying, 1 cup confectioners' sugar for dusting
Instructions
Dissolve compressed yeast in warm milk and let it sit for a few minutes. Combine sifted flour and salt in a large bowl, then mix in the yeast mixture and egg until smooth before folding in currants, raisins, and apple pieces. Cover and let the dough rise in a warm spot for about an hour until doubled in size. Heat deep-fryer oil to 375 degrees F (190 degrees C) and use two spoons to drop 12 dough balls into the oil, frying until golden brown for approximately 8 minutes. Drain the finished doughnuts on paper towels and finish by dusting them generously with confectioners' sugar.
