Deep Dish Persimmon Pie
Ingredients
¼ cup light brown sugar, packed, 1 tablespoon ground cinnamon, 1 tablespoon cornstarch, ⅛ teaspoon sea salt, 6 cups Fuyu persimmons, peeled and thinly sliced, 10 graham crackers, crushed, ¼ cup butter, melted
Instructions
Preheat your oven to 375 degrees F (190 degrees C). In a bowl, mix brown sugar, cinnamon, cornstarch, and sea salt. Layer half of the persimmons in an 8-inch deep pie plate and sprinkle with half of the sugar mixture, then repeat with the remaining fruit and sugar. Combine graham cracker crumbs with melted butter and spread the mixture over the persimmons. Bake for about 45 minutes until the crust is golden and the fruit is tender. Serve warm.
