Canned Apple Pie Filling
Ingredients
4 ½ cups white sugar, 1 cup cornstarch, 2 teaspoons ground cinnamon, ¼ teaspoon ground nutmeg, 10 cups water, 2 teaspoons salt, 3 tablespoons lemon juice, 2 drops yellow food coloring, 6 pounds apples
Instructions
Combine sugar, cornstarch, cinnamon, and nutmeg in a large saucepan. Whisk in water and salt, then heat until the mixture boils and thickens. Take the pan off the heat and stir in lemon juice and food coloring. Prepare canning jars, lids, and rings by boiling them to sterilize. Peel, core, and slice the apples, then pack them into the hot jars, leaving 1/2 inch of space at the top. Pour the hot syrup over the apples and use a knife to remove any air bubbles. Seal the jars with lids and process in a water bath canner for 20 minutes.
