Candied Lemon Peel
Ingredients
3 lemons, 8 cups cold water, or as needed, 2 cups white sugar, or as needed
Instructions
Slice lemons into thin strips, removing the pulp. Boil the strips in water three times, draining between each boil. Simmer the peels in a syrup of equal parts water and sugar until the white pith becomes translucent. Store the peels in the syrup or dry them and toss in additional sugar.
