Ingredients

4 cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, 1 cup butter, 2 cups white sugar, 2 eggs, 2 cups persimmon pulp

Instructions

Preheat your oven to 375 degrees F (190 degrees C). Combine the flour, baking soda, cinnamon, and ginger in a bowl and set aside. In a separate large bowl, use an electric mixer to beat the butter and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Mix in the persimmon pulp, then gradually stir in the dry ingredients until just combined. Place rounded spoonfuls of dough onto ungreased baking sheets, leaving 2 inches between them. Bake for about 12 minutes until they are slightly puffed and golden. Allow the cookies to cool on the pan for 5 minutes before moving them to a wire rack to finish cooling.
