100% Fruit "Cake"
Ingredients
1 seedless watermelon, 2 cups strawberries, hulled and sliced, 1 cantaloupe - seeded, peeled, and sliced (Optional), 1 fresh pineapple - peeled, cored, and sliced (Optional)
Instructions
Cut three 1- to 2-inch thick slices crosswise from the center of a watermelon. Remove the rinds and place the widest slice on a serving plate. Create a layered stack by alternating the watermelon with layers of sliced strawberries, cantaloupe, and pineapple, finishing with the remaining watermelon slices. Use cookie cutters or a knife to carve decorative shapes from leftover fruit and arrange them over the tiers along with extra berries. Chill the cake until ready to serve, then cut into wedges using a sharp knife.
