Furutsu Sando (Fruit Sandwiches)
Ingredients
½ cup heavy whipping cream, 1 tablespoon powdered sugar, ½ teaspoon vanilla extract, 4 slices Japanese milk bread, crusts removed, ½ cup sliced strawberries, ½ cup peeled sliced kiwi , ½ cup mandarin orange segments, ½ cup halved seedless grapes
Instructions
Whip the cream, powdered sugar, and vanilla in a bowl using an electric mixer on medium speed until stiff peaks form, approximately 3 to 5 minutes. Coat one side of each bread slice with the whipped cream. Place fruit pieces in a diagonal line from one corner to the other on two of the slices. Fill the remaining space with the rest of the fruit, trimming pieces to fit. Cover with the remaining bread slices, cream-side down. Wrap the sandwiches tightly in plastic wrap and refrigerate for 1 to 24 hours. After chilling, unwrap and use a serrated knife to slice each sandwich diagonally through the center of the fruit row.
