Chocolate-Covered Cherries
Ingredients
60 maraschino cherries with stems, 3 tablespoons butter, softened, 3 tablespoons corn syrup, 2 cups sifted confectioners' sugar, 1 pound chocolate confectioners' coating
Instructions
Drain the cherries thoroughly and pat them dry with paper towels. Combine the butter and corn syrup in a medium-sized bowl, stirring until the mixture is smooth. Incorporate the confectioners' sugar and knead the mixture until it forms a dough. Wrap approximately one teaspoon of the dough around each cherry. Refrigerate the wrapped cherries until they are firm. Melt the confectioners' coating in a heavy saucepan over low heat. Holding each cherry by its stem, dip it into the melted coating and transfer it to a sheet tray lined with waxed paper. Refrigerate until the coating has completely set. Keep the finished cherries in an airtight container in a cool location.
