Potato Plum Dumplings
Ingredients
4 large russet potatoes, ½ teaspoon salt, 1 tablespoon butter, softened, 2 eggs, beaten, ¼ cup farina, 1 cup all-purpose flour, or as needed, 12 Italian prune plums, 12 cubes white sugar, ½ cup butter, melted, ¼ cup white sugar, 1 cup dry bread crumbs, additional melted butter and sugar for garnish (optional)
Instructions
Boil scrubbed potatoes for 40 minutes until tender, then drain and rice them into a bowl. Mix the potatoes with salt, egg, and 1 tablespoon of butter, then stir in farina and flour to form a dough. Knead on a floured surface for 5 to 10 minutes until smooth. Stuff pitted plums with sugar cubes, then wrap each in a 3-inch square of dough rolled to 1/4-inch thickness. Simmer the dumplings until they float, then cook for 5 more minutes. Brown bread crumbs and sugar in the remaining butter, coat the warm dumplings in the mixture, and serve.
