Ingredients

2 eggs, ½ cup melted butter, 1 cup white sugar, 1 cup crushed pineapple with juice, 1 teaspoon vanilla extract, 2 ½ cups all-purpose flour, 3 teaspoons baking powder, ½ teaspoon baking soda, ¾ teaspoon salt, ½ cup chopped walnuts

Instructions

Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x5x3 inch loaf pan. Whisk eggs lightly, then blend in butter and sugar until smooth before stirring in the pineapple and vanilla. In a separate bowl, mix flour, baking powder, baking soda, salt, and walnuts, then combine this with the pineapple mixture until just moistened. Pour the batter into the prepared pan and bake for 1 hour. Verify it is done with a toothpick, allow it to rest for 10 minutes, then remove from the pan to cool and wrap.
