Fresh Mango Muffins
Ingredients
1 ½ cups all-purpose flour, ¼ cup white sugar, 2 teaspoons baking powder, 1 pinch salt, 3 eggs, ¼ cup heavy whipping cream, ¼ cup unsalted butter, melted, 3 cups mango - peeled, seeded, and cubed
Instructions
Preheat your oven to 350 degrees F (175 degrees C) and grease or line a 12-cup muffin tin. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a separate large bowl, beat the eggs, cream, and butter until smooth, then stir in the flour mixture until just moistened. Gently fold in the mango pieces and divide the batter evenly into the prepared muffin cups. Bake for about 25 minutes, or until a toothpick inserted into the center comes out clean.
