Pomegranate Relish
Ingredients
2 pomegranates, 3 tablespoons olive oil, 1 shallot, minced, 1 tablespoon lime juice, salt and pepper to taste, ½ cup fresh cilantro, chopped
Instructions
Extract the juice and seeds from the pomegranates and set aside. Warm oil in a small skillet over medium heat and sauté shallots until they turn golden. Add the pomegranate juice and seeds, lime juice, salt, and pepper, cooking for approximately 3 minutes until slightly thickened. Remove the pan from the heat, stir in the cilantro, and serve the mixture at room temperature.
