Plum Buckle
Ingredients
7 cups pitted and quartered plums, ⅔ cup butter, softened, 1 ½ cups white sugar, 2 eggs, 3 cups sifted all-purpose flour, 1 tablespoon baking powder, ½ teaspoon salt, 2 cups milk, 2 teaspoons vanilla extract, 1 cup white sugar, ½ cup butter, softened, ¼ cup all-purpose flour, 1 teaspoon cinnamon
Instructions
Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch baking dish. Arrange the plums in the bottom of the dish. In a large bowl, cream 2/3 cup butter with 1 1/2 cups sugar until smooth. Beat in the eggs one by one, then stir in 3 cups of flour, baking powder, and salt. Incorporate the milk and vanilla extract until the batter is smooth, then pour it over the plums. Combine 1 cup sugar, 1/2 cup butter, 1/4 cup flour, and cinnamon to create a crumbly topping and sprinkle it over the batter. Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean.
